Chicken and Spinach Soup

In my previous article I was writing about the goodness of Spinach. Here I've found a nice recipe for Chicken and Spinach soup (Asian style). My house mate always has that whenever she has constipation problem or suffering fever.
Chicken and Spinach Soup
6 oz of Chicken Breasts
6 oz of Fresh Spinach
2 tbsp of Soy Sauce
2 tbsp of Spring Onions, chopped finely
2 tsp of sugar
1 egg (optional)
* tbsp = table spoon
* tsp = tea spoon
- Remove spinach stems and wash it. Blanch and toss leaves in boiling water, until wilted.
- Pour cold water over spinach leaves.
- Slice breasts chicken fairly thinly.
- In another pot of boiling water cook chicken slices for 2 minutes until white and slightly firm.
- Drain both spinach and chicken.
- Bring chicken stock to a simmer, add soy sauce and sugar.
- Add cooked spinach and chicken
- Bring soup back to simmer then add spring onions. Serve hot.
Optional:
When the soup is boiled, you can put in an egg and lightly and slowly stir so that the egg whites and yolk produce a thin long texture to add up a fuller taste.
