Broccoli Salad Recipe

December 29th 2006 04:36

Recently I had to travel a lot more and I didn’t get to write much on my blog, but I was blessed to have come across this particular simple yet nice restaurant that promotes natural juicing for health. This shop was recommended by my mom’s best friend’s brother, who came by to visit and brought my mom there to try out the unique juices.

When I manage to talk a little more to the restaurant owner of Everfresh Juice Station & Grill, Mr. Mak, he was recommending broccoli salad for my mom to try out as it is packed with cancer-fighting properties. This was just one of the broccoli salads I tried and it tasted well enough to have it at least 3 times a day. As for my mom, well, she’ll need it daily to rebuild all her immune system again since her attack of Steven Johnson Syndrome.

Here is the simple line of recipe, enough to fill up one meal:

Broccoli Salad
Fresh broccoli
(chopped into tiny pieces, including the stalk)
3/4 to 1 cup of Mayonnaise (or plain yogurt)
1/2 cup of raisins or fresh grapes
(grapes need to be chopped into tiny pieces)
1 cup of sunflower seeds
(lightly pounded into smaller pieces or lightly grinned)
3 slices of bacon / 1 sausage
(cut into small thin slices)

Helpful tips:
If you can’t stand the taste of raw broccoli, have pot of water boiled with a little bit of salt and 1/2 teaspoon of olive oil. Turn off the fire when it is boiled and pour in your broccoli and take it up after 10 seconds. It is a little cooked but the most of the nutrients are not spoiled yet.
If you are counting your calories, do opt for yogurt rather than mayo. Furthermore yogurt that contains live culture will help your digestive system and bowel system better.

Jessicca,

I don't like Broccoli, which is a pity due to its cancer fighting capabilities, but there are so many flavours in this salad that maybe I could tolerate it or some variation.

I can eat it, just don't like it but I'll try to eat it a little more, mostly now only have it, when I'm out or at friends' places.

Hi katyzzz!

It's so good to see you again. ^_^

Yes, many people didn't like broccoli. My mom hardly cook this dish either. Yet this recipe gives a different flavour to broccoli, and I tend to like it. ^_^

Hope that the recipe will do good for you and do let me know after giving it a go.

Cheerio
