Did you know that mushrooms are brimming with protein, B vitamins (riboflavin, niacin and pantothenic), and minerals (selenium, potassium, and copper)? And the better part is they are actually low in calories.
Fresh mushroom have much higher nutritional benefits compared with the canned version, which may have excessive sodium.
Clean mushrooms only when you are ready to use them. Remove any bits of debris from the surface, rinse well with cold running water or gently wipe the mushrooms with a damp cloth, paper towel or soft brush.
Dried mushrooms are intensely concentrated in flavour and should be treated more like a seasoning than a vegetable. Soak dried mushrooms in hot water for 20 – 30 minutes, rinse, then chop and use.
Adding the soaking water to your sauces or soups will intensify the mushroom flavour.

I too did not know about it until recent years. There are some who doesn't have much medicinal values, and most of them can't be eaten. There are however, a minor few that has good properties and now widely recommended.
