Recipe: Stewed Ham and Lentils

I am not quite sure how much calories carried in this dish, but to look into the recipe of olive oil, and a good combination of meat and leafy green plus vegetables, I rate it as quite a healthy food to be recommended in the Woman's Weekly issue.
Stewed Ham and Lentils
serves 4
- 1 tbsp olive oil
(can also go for virgin olive oil or olive oil light)
- 1 onion, chopped finely
- 1 clove garlic, crushed
- 2 medium carrots, halved and sliced
- 1 1/2 cups brown lentils, rinsed and drained
(available at supermarkets)
- 650g smoked ham hock
(available at supermarkets)
- 1 litre water
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp pepper
(go for black pepper if you want it more fragrant)
- Chopped parsley to garnish
How do you prepare
1. Heat oil in a large pan. Add onion and garlic; cook stirring, until onion is soft, about 30 secs.
2. Add carrots, lentils, ham, water and bay leaf; season with salt and pepper. Bring to boil; simmer, covered, over low fire, stirring occationally for 35 minutes, or until lentils are tender.
3. Remove ham from stew. Remove discard bone from ham.
Chop ham coarsley.
4. Return chopped ham to stew; cook, stirring, for 5 mins. Season to taste with salt and pepper.
5. Serve stew garnished with chopped parsley.

Great Recipe!
You can substitute red kidney beans for the lentils on this one... add them later if you are using canned ones... and [you know] put them in to soak the night before if you are using dried ones...*lol* or you better book the dentist for you and your guests too...
I've added zucchini too with the carrot when using the red kidney beans it makes a great flavoursom dish that satisfies all the taste buds... which is what I try to do...*wink*
